All in all, it lives up to your taste buds. In my mind, it is the perfect combination of king oyster mushrooms and chicken. It's simple to make but tastes great. The first time I ate this dish was made by a former colleague, and it completely subverted my concept of king oyster mushrooms. It has since risen to the top of the list.

Prepare ingredients.

Cut the king oyster mushroom into thick strips. Sprinkle with salt and marinate for 20 minutes.

Shred the chicken breast and marinate with a little white pepper.

Peel, wash, and shred the ginger and set aside.

After removing the moisture from the king oyster mushrooms, rinse them twice with water to remove excess salt, and use your hands to squeeze out the moisture in the shredded mushrooms.

Heat the oil in a pan to six layers over medium heat. Add the shredded chicken and stir-fry until it turns white. Add the shredded ginger and stir-fry for a while. Add shredded mushrooms and stir-fry for about 2 minutes. Add appropriate amount of peppercorns and stir-fry for 1 minute. Add an appropriate amount of dark soy sauce for color, an appropriate amount of salt to taste, and stir-fry evenly.
