Overview
I posted the colorful glutinous glutinous rice dumplings for breakfast on WeChat, but I didn’t take photos of the entire making process. My friend urged me to make the recipe, so I had to post it mainly with text and pictures as supplement. Please bear with me. The finished product is absolutely eye-catching and tastes great! The ingredients are environmentally friendly and nutritious. Moms with picky eaters will no longer have to worry about their babies not eating enough breakfast.

Peel the old pumpkin and cut into small pieces, and cut the purple sweet potato into small pieces (steaming takes less time when cutting into small pieces) and steam until cooked. Pumpkins and purple sweet potatoes should be packed separately!

While steaming pumpkin and purple sweet potato, wash lettuce and amaranth. After cleaning, cut the lettuce into small pieces and prepare to be minced with a meat grinder.

Put the lettuce into a meat grinder and mince it into minced vegetables. I use the one in the picture. I personally feel that it is easier to use than a food processor for shredding vegetables. This is not an advertisement! Crush the lettuce and wrap it in gauze to squeeze out the juice and set aside (the green color will appear).

Boil amaranth in a pot of boiling water until the water boils. At this time, the water turns red, take out the amaranth and save the amaranth water for later use (the red color is gone). Don't throw away the amaranth, use it to make cold dishes.

The pumpkin and purple sweet potato are steamed. Use a meat blender to puree them separately (yellow and purple are available). Add an appropriate amount of glutinous rice ball powder to the pumpkin puree and mix well. Stir in the same direction to form a glutinous rice ball. Add a small amount of water according to the dry humidity. Because the pumpkin puree itself has moisture, you cannot add it before adding the glutinous rice ball powder. This will make it difficult to control the dry humidity. After kneading into a ball, it is as shown in the picture.

Purple sweet potato puree contains less water, so when mixing it with glutinous rice ball powder, add more water as appropriate. Finally, knead it into a ball as shown

Squeeze the juice from the lettuce, add the glutinous rice ball powder and form into a ball. The picture shows the process of kneading the dough. In the same way, add the cooled amaranth water to glutinous rice ball powder and form into a ball.

The glutinous rice balls in 4 colors are ready. What should I do if there is still one color? Don't worry, you don't have to tell me how to make white, right? By the way, just add water to the glutinous rice balls powder! It’s okay if you want to be lazy, just buy a pack of small glutinous rice balls from the supermarket~

Now comes the most time-consuming step. Roll large glutinous rice balls of various colors into small glutinous rice balls.

Add water to the pot and bring to a boil, add colorful glutinous rice balls, add an appropriate amount of fermented glutinous rice and cook until the glutinous rice balls float. Add appropriate amount of sugar and bring to a boil. Turn off the heat. Serve in bowls. Isn’t it very flattering?
