Chocolate Sandwich Cookies
Overview
When I learned baking a few years ago, I started by learning how to make biscuits, then I learned how to make cakes and breads, and then started making biscuits again. Biscuits come in a wide range, including sweet, salty, chocolate-flavored, matcha-flavored, etc. They can be eaten as a rough meal to temporarily relieve the stomach, or you can also drink them with coffee and tea, and learn from Jun Zhi's recipe to make chocolate sandwich biscuits. Drink milk and chew a few biscuits at breakfast, enjoy a cup of fragrant black tea or coffee and taste snack biscuits at afternoon tea. Sit beside the flowers and plants in the backyard in spring and summer, or sit in a warm room or beside the fireplace in autumn and winter. Squeeze some time on weekends to relax and enjoy tea with your family. It is a pleasure.

Ingredients
Steps
-
Sift room temperature butter and cake flour;
-
In a large bowl, add butter and sugar and mix well;
-
Pour in the egg liquid and mix evenly, then add flour in two additions and mix evenly;
-
Put the piping bag into the small round nozzle, pour the batter into the piping bag, and slowly squeeze the batter into the silicone mold. Don’t squeeze too much, and squeeze the amount evenly;
-
After a while, the batter collapsed on its own;
-
Place in preheated oven, 325°F, about 15 minutes;
-
When you see the edges of the cookies turning a little light brown, you can take them out of the oven;
-
While the cake is hot and still a little soft, use molding to press the edges to make the cake more regular and neat, and then unmold it.
-
Boil chocolate and butter over water and stir well;
-
Place a piece of parchment or foil on the plate, pour the chocolate liquid into the plate, smooth it out with a spatula or pusher, and wait until it solidifies;
-
After the chocolate liquid has solidified, use the mold used to press the biscuits to press out round pieces. If the biscuits are cold and cannot stick to the sandwich, put the biscuits in the microwave for a few seconds. The biscuits will stick better when they are warmer. Just sandwich a piece of chocolate between two biscuits and let it cool. If you can't finish it at one time, you can put it in a dense can and put it in the refrigerator for four or five days. There should be no problem.
