After adding the butter, wait for the water to boil, and stir the mixed paste over the water. The fire can be turned on to medium-low. If the temperature of the egg-beating bowl is a little high at this time, be careful of getting burned. You can wrap the egg-beating bowl with a wet water cloth and stir constantly with a scraper to avoid large lumps.
