Prepare ingredients.

Peel the purple sweet potato and cut into small pieces, steam and press into puree.

Separate the egg yolks and whites, add 25 grams of sugar to the egg yolk basin and mix well.

Add milk and corn oil and mix well.

Add purple sweet potato puree.

Beat evenly with a whisk.

Add the flour sifted twice.

Add a few drops of lemon juice to the egg whites, beat until coarsely foamy, and add another 1/3 of 30 grams of sugar.

Beat until fine foam and add the remaining 2/3 of the sugar.

Beat until slightly coarse, add the final white sugar

Beat until the small peak of the egg beater stands up. Finally, pour into the protein paste.

Add one-third of the egg whites to the purple sweet potato yolk paste.

Use cutting and mixing techniques to mix well

Pour the cake batter into the mold. Preheat the oven to 150 degrees, with upper and lower heat.

Bake in the oven for about 20 minutes, if using paper cups, the time will be slightly longer.
