Overview

  1. Prepare pork belly and lettuce, peel the lettuce.

  2. Slice the pork belly into slices about one centimeter thick.

  4. Cut the small square dice into a cross pattern from the middle without cutting it off.

  7. Bring water to a boil and add meat. (You don’t need to use cold water to boil the diced pork.) Add the onions, ginger, and cooking wine, bring to a boil, remove and set aside.

  8. Add oil to the pan, add tomato paste and stir-fry until red oil appears.

  9. Add boiling water, 1 spoon of sugar, a little salt and half a spoon of white vinegar.

  10. Add the pork belly and bring to a boil over high heat, then simmer over low heat for about fifteen minutes.

  11. Open the lid, add lettuce, reduce the juice over high heat, then add half a spoonful of white vinegar, stir in the gravy and serve.
