Dice potatoes, carrots, and eggplants, and cut beans into small pieces

Dried tofu diced

Blanch carrots and potatoes in boiling water until half cooked

Cut the garlic sprouts into small sections and separate the green and white parts

Two spoons of bean paste, one spoon of soy sauce, a small spoon of salt, two small spoons of sugar, a small spoon of chicken essence, a small bowl of water starch, mix into the sauce

Put some oil in a medium heat pot, sauté the white part of the garlic sprouts until fragrant, add the beans

Stir fry for a few times and add carrots and potatoes

Add dried tofu and continue to stir-fry

Add eggplant and continue to stir-fry

When the eggplant looks cooked, add the sauce, turn up the heat, and stir-fry continuously to reduce the juice. Once the juice is collected, it’s ready to serve
