Choose fresh shrimp.

Soak green onions, Sichuan peppercorns and sweet rice wine together and set aside.

Crush the ginger in a food processor to retain the juice, and mix it with the soaked rice wine and pepper water. (Do this step after the shrimp meat is chopped, and let the peppercorns, green onions and rice wine soak for a while)

Peel and devein the shrimp and set aside.

Pound the shrimps. (The degree of chopping depends on personal preference)

Add the prepared seasoning water, egg white, flour and salt to the chopped shrimp meat, stir well and set aside.

Heat a pan, add an appropriate amount of oil, shape the shrimp paste into round shapes, put them into the pan one by one, and fry over low heat.
