Peel the potatoes and cut into thin slices, wash with water to remove the starch.

Boil in water until medium cooked, remove and cool.

Cut the carrots into diamond-shaped slices, remove the seeds from the green pepper and cut into small pieces, wash the ginger slices and shallots and set aside.

Slice the fat and lean meat separately. Add salt, cooking wine, light soy sauce, and water starch to the lean meat, mix well, and marinate for a while.

Add the fat to the pot and stir-fry over medium-low heat to release the oil.

Add lean meat and stir-fry until it changes color.

Add ginger slices, shallots, and carrots and stir-fry for a while.
