Wash the duck paws, add water and ginger slices to the pot and boil the duck paws. Take out the duck paws and rinse them in cold water

Pour water into the pot, add ginger slices, and duck feet. Bring to a boil over high heat, then reduce to medium to low heat and cook until it is chewable. Take out the duck feet and soak them in cold water.

Put mustard sauce, minced garlic, shredded ginger, soy sauce, vinegar, and sugar in a bowl, mix well, and cut lemon slices.

Remove the meat from the duck feet, mix well with the seasonings in the bowl, add lemon slices, and refrigerate for about one night before eating.
