Lotus root chicken soup
Overview
In the past, lotus root was used with pork ribs. Today I tried it with chicken. It was really good. It is the season of lotus root now and it is especially delicious.

Cut the lotus root into large pieces.

Prepare red dates, dendrobium, and cut 2 slices of ginger.

After the chicken is blanched, place it in a casserole with boiling water.

Add lotus root at the same time.

Add ginger and dendrobium at the same time. Bring to a boil over high heat, then turn to medium-low heat and simmer for half an hour.

Then add red dates. Mine is a big jujube, 4 is enough, if it is a smaller one, add more. Continue to simmer for another 1 hour.

Finally, add salt and coriander to enhance the flavor.
