Rice Cooker Sweet Potato Cake

Overview

The sweet potatoes I cooked last night were super sweet, and I had one left. I wanted to make muffins in the morning. But I am too lazy to use the oven. I have a small oven at home, and it’s hard to control the time and heat every time I use it, and it often burns. On the contrary, it is simple and easy to make with a rice cooker. There is no muffin cup, just pour it directly into it. Haha, at first glance, it seems that lazy people are lazy. The photography skills are poor, but the food tastes very good.

  1. There are also sugar, sesame seeds, and corn oil that I forgot to take.

  2. Peel the sweet potatoes and mash them with a spoon.

  3. Add sugar, corn oil, milk to eggs and beat evenly.

  4. Add the flour to the baking powder, mix well and sift, then add to the egg mixture.

  5. Use a spatula to cut and mix evenly until there is no dry powder.

  6. Add sweet potato puree and continue to mix.

  7. Finally add sesame seeds and mix well.

  8. Preheat the rice cooker and brush it with oil. Pour in the batter and stir a few times to deflate. Cover the exhaust vent with a damp cloth. Press the cooking button, wait for the button to pop up and let it cook for 20 minutes before pressing it again. Open the lid 20 minutes after the jump button and insert a toothpick into the batter that is not sticky.

  9. Finished product. The white spots are because I opened the lid too late and water vapor dripped on it.

  10. You can see the small pieces of sweet potato, which taste soft, sweet but not greasy.
