Fried purple potato balls

Deep-fried purple potato balls are simple to make but crispy on the outside and tender on the inside, very delicious. A wonderful afternoon tea starts with these small meatballs.

Steam the purple sweet potatoes and grind them into puree while hot.

Add glutinous rice flour and sugar. The amount of glutinous rice flour depends on the moisture content of the purple sweet potato you buy. My purple sweet potato is very dry, so you don’t need to add too much. The amount of sugar can be adjusted according to personal taste.

Mix well and knead into a ball.

Divide into small balls. I made it a little smaller than a ping pong ball.

Heat the oil in the wok. When the oil is 5 minutes hot, add the small meatballs. Keep stirring until the outside is brown.
