Blend 60 grams of passion fruit in a food processor and set aside

Pour 4 eggs into a bowl and beat with an egg beater and set aside

Butter softened at room temperature

Add the powdered sugar to the butter in three batches and beat with an electric mixer until the butter turns white and the powdered sugar and butter are completely mixed

Every time you whip the butter, use a rubber spatula to scrape the butter from the sides of the basin into the middle and continue whipping

Then add the beaten egg liquid, I added it in seven times, and beat it with an electric egg beater at high speed for two minutes each time

Also, remember to scrape the sides of the pot with a rubber spatula after each whipping

Here I use the post-juice method, so add the egg liquid and beat evenly, then sift in the low-gluten flour and baking powder

Then add 60 grams of passion fruit juice in three batches (due to the old machine, my juice is not smooth enough, please ignore it)

Pour the mixed cake batter into a mold lined with oil paper (since I don’t have a special mold for pound cake at home, I use a 450g toast mold here)

Bake in the middle and lower racks of the oven preheated at 175 degrees for 55 minutes. Cover with tin foil when you are satisfied with the color halfway through. After taking it out of the oven, insert a toothpick and remove the wet cake batter

The sugar water can be boiled while baking the cake: add 20 grams of fine sugar to 60 grams of water and cook over low heat until the sugar melts

After cooling, add 50 grams of passion fruit juice

After the pound cake comes out of the oven, when it is still warm, start brushing the sugar water on all sides!
