Except for the matcha powder and cocoa powder that are not added yet, all raw materials are 300 grams of high-gluten flour, 10 grams of fine sugar, 5 grams of salt, 170 grams of water, 8 grams of honey, and 4 grams of yeast. Put them in a kneading machine and knead until a rough film forms. There is no need to knead until a film appears.

After resting in the refrigerator, take out the dough, divide each dough evenly into 6 portions, roll into balls, cover with a damp cloth and rest for 20 minutes.

After the dough has rested, take one color of each dough, press 3 pieces of dough one after another, and use a rolling pin to roll it into a neat rectangle.

Turn on the fermentation function of the oven, at about 33°C, and the humidity is about 75%. You can put a bowl of hot water in the oven and continue fermentation for 40 minutes.
