  1. Ginger, onion and garlic are prepared as shown.

  2. Cut the ribs and wash them. Add appropriate amount of oil, salt, cornstarch and light soy sauce and marinate for 20-30 minutes.

  3. Heat oil in a hot pan, add minced ginger, garlic and scallions and saute until fragrant.

  4. Add the pork ribs and stir-fry until they change color and are half cooked.

  5. Add three tablespoons of white sugar (more as appropriate).

  6. Pour in an appropriate amount of light soy sauce (add according to personal taste).

  7. Add just enough water to just cover the ribs.

  8. After simmering over medium heat for five minutes, turn it over to avoid sticking to the pan, simmer for another 3 minutes, and finally add a little starch water to thicken the sauce.

  9. Arrange on a plate and sprinkle with a little chopped green onion.
