  1. We first pour the protein powder, 38 grams of water and salt into the tank of the fresh milk machine (the tank and egg balls should be cleaned with dish soap to prevent oil from making the protein powder unable to beat)

  2. Turn on the milk machine to medium speed, mix the protein powder and beat

  3. While beating, pour the glucose syrup, 100 grams of water, and 110 grams of sugar into the pot and heat over high heat

  4. Beat the protein powder until white and foamy. Pour 50 grams of granulated sugar into the protein powder, and continue beating until it becomes dry foam (that is, stiff, use an egg ball to raise a peak, it will be straight upward and will not bend)

  5. Boil the syrup to 125℃ to 130℃ (the nougat produced at 125℃ will be softer, and the nougat produced at 130℃ will be harder. Decide on the syrup temperature according to personal preference

  6. Set the milk machine to slow speed, pour the sugar along the edge of the tank, and then turn on medium speed to beat evenly (the protein powder will become a little thinner after adding the syrup, which is normal)

  7. While the sugar is still hot, add the butter

  8. Beat the butter evenly. If the butter is not beaten evenly, there will be tiny gaps in the middle of the table-sized nougat

  9. Pour the milk powder into the egg beater (choose full-fat milk powder. The quality of the milk powder determines the flavor of the nougat. If you are willing, choose better milk powder)

  10. Pour the pistachios and almonds onto a non-stick mat, then pour the beaten nougat mixture directly onto the surface of the nuts

  11. Grasp the mat and fold the nougat, mix the nuts and nougat evenly, mix well and let cool slightly to facilitate later operations

  12. Use a rolling pin to roll out the nougat to 1cm thick

  13. Cut the 4 sides of the nougat neatly, and then cut it into 3cm wide candy bars

  14. Finally, just cut the nougat into small rectangles with a width of 1cm. Then you can pack it however you want
