Radish, green onion and mutton dumplings
Overview
Today is the winter solstice. We eat glutinous rice balls in the south and dumplings in the north. To celebrate the festival, I made mutton dumplings.

Preparation materials: radish, green onion, mutton

Use a bread machine to add water and flour and mix well, then let it rest in a basin for 50 minutes.

Prepare the filling: first mix the chopped mutton with peanut oil, light soy sauce, oyster sauce, sugar and salt until evenly seasoned. Cut the radish into shreds and blanch it in boiling water. After cooling, cut into dices. Chop the scallions into fine pieces and mix them into dumpling fillings.

After the dough has risen, add an appropriate amount of flour and knead it evenly, roll it into a round shape, divide it into 40 equal parts, then use a rolling pin to roll it into a round piece with a thick middle and thin sides, and then wrap it with fillings. This is the finished product.

Fill the soup pot with water and bring to a boil, then put the dumplings into the pot. Add cold water three times in between and bring to a boil, then put it into a bowl and start eating.
