Zucchini and Dried Rice Soup
Overview
I have always been accustomed to our Cantonese soup. It is good to change the taste occasionally and switch to simple and light sea rice and gourd soup.

Main ingredients: dried shrimps, zucchini. (Shrimp should be washed in water to remove any sand)

Wash and cut the zucchini.

Add an appropriate amount of oil to the pan and sauté the washed shrimp skin until it becomes dry and slightly yellow.

Add zucchini and stir-fry for a while.

Add salt to suit your taste and stir-fry until the gourd becomes soft. (If you like soy sauce, add 1 tablespoon)

Add a large bowl of water.

Cover tightly and cook until the melon slices are tender and turn off the heat.

For the finished product, add chopped green onion, sesame oil and appropriate amount of pepper and serve.
