Russian Abalone in Chicken Sauce
Overview
The meat of abalone is delicious and it is a valuable seafood. However, it is not a fish, but a single-valve mollusk that crawls on rocks below the low tide line in shallow seas. There are many types of abalone and they are widely distributed. Abalone is distributed along the coast of my country. In the north, Dalian and Changshan Island produce more abalone, and the ones they produce are Panda abalone, which are larger and ovoid in shape. This abalone I searched on Baidu is somewhat similar to the Pan Da abalone. The first time I made such a large abalone, I used stupid chicken soup and then cooked it in chicken stock. The texture is still unique to abalone, firm and tough. It’s definitely delicious, but I wonder if the big abalone would be more delicious if cooked differently.

Use a sharp knife to make diagonal cuts on the body of the abalone, with the knife edges spaced about 6mm apart. Do not cut until the depth reaches the bottom of the abalone. Cut smoothly to the end

Lift the knife and twist the direction of the abalone 90 degrees, and continue cutting

Put the processed abalone into the cooking pot, ladle in the cooked chicken soup,
