Cut off the roots of the enoki mushrooms, wash and cut into sections.

Wash and chop green onions and coriander and set aside.

Heat oil in the pan, add chopped green onions and saute until fragrant.

Add the enoki mushrooms and stir-fry a few times.

Add enough water to simmer.

About 1 minute after boiling the pot, add the egg liquid and stir until the egg liquid is cooked.

Finally add salt and mix thoroughly and serve.
