Cranberry Kidney Bean Filling
Overview
I bought kidney beans before the Mid-Autumn Festival to make mooncake fillings, but I never made them. Today I have free time, so I made all of them into fillings. I added dried cranberries to a small part, and I will use them to make snacks in the future.

Soak the kidney beans for 24 hours until they are completely swollen and have no wrinkles

Peel off the skin

Put it into a pot and cover it with cold water, bring it to a boil and then reduce the heat to low and simmer until soft

Place in a food processor and puree

Put the kidney bean puree into a pot over medium-low heat, add rock sugar or white sugar

Add oil and stir constantly

Stir until the water evaporates completely

Chopped cranberries

Add in the kidney beans and mix well
