Xinjiang pilaf
Overview
Xinjiang pilaf is a Uyghur delicacy. It is served in a big pot and on a big plate, and a large crowd gathers around to eat it with the middle three fingers instead of chopsticks. Pilaf is simple to make and rich in nutrients. It was a delicacy created by smart mothers in the past when there was a shortage of vegetables in the desert. The basic version of pilaf is salty pilaf made of mutton (lamb chops, lamb bones), carrots, and white onions. Vegetarian pilaf and sweet pilaf are also available. Sweet pilaf is based on plain pilaf. When preparing steamed rice, it is topped with raisins and dried apricots (preferably dried apricots, which are particularly sweet). Of course, you can also put raisins and dried apricots in the meat pilaf. These combinations are up to personal taste. Personally, I feel that among Xinjiang delicacies, pilaf is especially suitable for children and the elderly. Pilaf is made in an iron pot, and the rice is added directly after frying the vegetables. The heat needs to be controlled, and it is suitable for more people and more food. If there are fewer people, there will be waste because the rice will be scorched at the bottom of the pot. If there are fewer people, I suggest you use an electric rice cooker. Electric hot pot saves trouble.

Prepare materials.

Cut the carrots into thin strips and the onions into thick strips.

Pour enough oil into the hot pan for cooking.

Add the lamb chops and stir-fry over medium heat until browned on both sides.

Add salt, enough at a time.

Push the fried lamb chops to the side and pour the carrots into the oil.

Saute carrots until soft, add onions and sauté until fragrant.

If you like your rice to be soft and sticky like me, put the rice underneath and spread the vegetables on top. If you like to eat grains, put the vegetables on the bottom and the rice on top.

Add water and look at the picture carefully. Don't overdo it, and don't overdo it. The rice on top should not be higher than the meter. Put it into the rice cooker and cook. Don't use too much water, just do it a few times and you'll get the results.

After cooking, open the pot, stir the rice and vegetables evenly, cover and press Cook for three to five minutes to turn off the power.
