Eggplant with Minced Meat
Overview
My minced eggplants are never fried, because the minced meat is made from plum meat, and a lot of oil will come out after frying, so the eggplants will absorb the oil and have a fragrant taste

Ingredients
Steps
-
Wash and peel the plum meat
-
Slice into shreds and then chop into pieces. No need to mince it into minced meat
-
Wash the black eggplant and cut into long strips
-
Heat a pan over medium-low heat, add eggplant and stir-fry continuously
-
Wait until the eggplant loses water and becomes wrinkled, then take it out and set aside. The fire must be medium to low, otherwise it will burn easily. Clean the pot
-
Heat an appropriate amount of oil in a pot over medium heat, add minced ginger and garlic and sauté until fragrant. If it doesn’t stick to the pan, add less oil. I use an iron pan, so add more
-
Pour in the minced meat and quickly stir-fry evenly
-
Add pepper and continue to stir-fry until the fat is cooked out
-
The oil will be cooked out in two or three minutes. If you don’t like the meat too dry, you can shorten the time
-
Pour in the eggplant and stir-fry evenly until the eggplant skin turns dark
-
.Add soy sauce, oyster sauce and chili sauce, stir-fry evenly, sprinkle with chopped green onions if you like and serve
