  10. The center of the fan shape is cut along the radius. This length determines the length of the pig's trotters. I basically cut it to half, so the pig's trotters appear relatively short. If you want to make long pig's trotters, you need to roll out the dough and cut it at one-third, but you need to roll it thin, otherwise the pig's trotters will be too fat.
