Green garlic pork slices
Overview
This is a relatively common home-cooked dish, and there are various cooking methods. I prefer this kind of taste that tastes dry and fragrant, and it can eliminate fat, kill two birds with one stone, O(∩_∩)O haha~.

Wash the green garlic and cut into sections. Wash the meat and slice it.

Heat the pot, turn to low heat, add no oil, put the meat slices into the pot, and stir-fry the oil (the fat meat is placed on the bottom of the pot, and the lean meat is on the fat side). Don't make the meat too dry, otherwise it will taste bad. (The photo happened to capture the place where the smoke was lingering, so it was blurry, o(╯□╰)o)

Push the meat aside, leave some oil in the pot (if there is too much oil, scoop out more), sauté the minced ginger and garlic, add cooking wine, light soy sauce, salt, and a little sugar, and stir-fry the meat again.

In another pan, fry the green garlic. There was a lot of oil left in my pan, so I pushed the meat aside and fried the green garlic directly.

Stir-fry the green garlic until raw, add the freshly stir-fried meat and stir-fry evenly, add salt and chicken essence, and put on a plate.
