I bought less than a pound of leeks, washed them, dried them, chopped them, stirred them in cooking oil and let them sit. The leeks should be marinated in oil in advance so that they won’t become watery. Then blanch the mushrooms, fry the eggs, and remove the shells from the shrimps.

On top of the leeks pickled in cooking oil, add fried eggs, chopped shiitake mushrooms, minced shrimps, a handful of sesame seeds, half a green onion and a little ginger, then add an appropriate amount of salt, chicken essence, thirteen spices and sesame oil.

Boil the water and add the dumplings. Pour cold water into the dumplings three times and they are done. Chili oil and vinegar are standard.
