One fish, two meals, fish head stewed with tofu
Overview
The grass carp I bought has already been made into garlic-roasted fish cubes and served as a tooth sacrifice. Use the remaining fish heads and bones to make a fish head stew with tofu.

Prepare ingredients as shown.

Wash the fish heads and bones and drain.

Squeeze in lemon juice and a little salt and marinate for about ten minutes.

Heat oil in a wok, add onion and ginger and sauté until fragrant.

Put the fish head and fish bones into the pan and fry for a while until they change color.

Flip and continue frying until both sides are browned.

Pour in enough boiling water and simmer over medium heat for about twenty minutes.

Add the tofu and continue simmering for about five to ten minutes. Add salt to taste.

Sprinkle with chopped coriander and serve.
