Dried radish refers to sun-dried salted radish. It is a unique and easy-to-preserve dried vegetable that is loved by the domestic public. Rich in vitamin B, the iron content is higher than other foods except daylily. Dried radish is called preserved vegetable in Chaoshan. It is salty, crispy, digestible and appetizing. This is the salty and fragrant dried radish grown by my uncle in my hometown, dried and pickled by himself. It is very crispy and refreshing.

Wash and cut into strips vertically,

Then cut into fine pieces crosswise

After cutting, soak in water for 3-5 minutes

Squeeze out the excess water from the soaked dried radish

Put it in a pot (electric cake stall) and stir-fry the water. You can add a little more oil because you will need to fry the eggs later.

Stir-fry the radish until it becomes fragrant and becomes slightly golden

Scoop it out and put it into the egg mixture basin and mix well. This fried egg with radish does not need any seasoning or oil. Dried radish is salty, enough oil has been put in when frying dried radish

First put half of the egg paste in the pan and spread it flat. When you see the egg liquid solidifies, it means it is cooked. Turn it over and fry it.
