Handle the crabs Break the crabs into pieces.

Cut the ingredients into slices: ginger, coriander, green onions, shredded peppers, and garlic.

Make curry by sauteing ginger, green onion and chili until fragrant, add curry powder and oyster sauce, then add a little water and simmer, then add white pepper and sugar.

Dip the cut crabs in flour and dip them in a small amount of flour. (This way the crab meat will not fall apart during the frying process)

After the fried crabs reach the oil temperature, place the crabs in the oil pan and fry for one minute. Drain the water from the crabs before frying them. (For how to determine the oil temperature, please see tips ❶ at the bottom of this article)

Mix well and pour the fried crab into the curry pot, then add milk and fish sauce and mix well.

Pour the beaten eggs (two) into the pot.

Add the chopped coriander to the pan, stir-fry and mix well before serving.
