Today I will make a light butter toast. The overall texture is light but full of toughness. It exudes the rich aroma of butter. Make the Polish seeds one night in advance. Mix 50 grams of high-gluten flour, 50 grams of water, and 0.5 grams of yeast together and refrigerate overnight. Take out the Polish seeds the next day and let them rest at room temperature for half an hour. If the volume expands to three times its original size and there are dense mesh pores inside, it's good.

Next, make the main dough. Put all the ingredients, 250 grams of high-gluten flour, 3 grams of salt, 45 grams of white sugar, 15 grams of milk powder, 5 grams of yeast, 1 egg (55 grams), 90 grams of whipping cream, 50 grams of milk, and Polish dough into a mixer and mix.

First mix at low speed for 1-2 minutes, then mix at high speed until the surface is smooth and a film forms.

Take out the dough and roll it into a ball.

Place in a basin and wrap with plastic wrap. Ferment at room temperature around 26 degrees until doubled in size.

Dip your finger in flour and insert it into the middle of the dough. If it doesn't shrink or collapse, it means it's ready to ferment.

Take out the fermented dough and deflate it.

Then divide evenly into 3 portions.

Roll each piece of dough into a round shape, cover with a wet towel, and continue to rest for 10 minutes.

Take a piece of relaxed dough and roll it into a shape of beef tongue.

Then fold both sides inwards.

After each piece of dough is processed, arrange it evenly in a 450g toast box.

Preheat the oven to 33°C in advance, put a bowl of hot water in the oven to help fermentation, put the toast box in and ferment until it is 8 minutes full.

Take it out, brush the surface with egg wash, and preheat the oven.

When the oven is preheated to 170°C, place the toast box on the bottom floor and bake for 30 minutes. Note: Pay attention to cover the surface with tin foil immediately after coloring to prevent the surface from being too burnt.
