First, separate the fish into two halves in the middle and clean them.

Make two cross cuts on the back of the fish, sprinkle salt on the inside and outside, let it marinate for 5-10 minutes, clean it, and then use kitchen paper to absorb the water from the fish.

The oil temperature in the pot is about 50-60. Slide the fish into the pot and fry one side first until golden brown.

Flip and fry the other side, then flip and fry the inside for more browning and crispiness.

Fry it twice on both sides and it’s almost done! If you like to eat coriander, you can put the coriander on top of the fish as a garnish, and then pour the remaining oil on top of the coriander to make it taste even more delicious!
