Wash the beef and cut into small pieces.

Blanch it in a pot and wash it.

Prepare onions, ginger, star anise, and rock sugar.

Pour water into the pot, add the blanched beef, green onions, ginger, star anise, rock sugar, and soy sauce and bring to a boil over high heat, then simmer over medium to low heat.

Peel potatoes and carrots, wash and cut into pieces.

When the beef is simmered until cooked, add potatoes and carrots and continue simmering.

Cook until the soup is almost thick, add salt and mix thoroughly.
