Cut chicken breast into cubes, mix well with cooking wine, starch and salt, marinate for 10 minutes, dice potatoes, carrots, onions and peppers, blanch seafood and mushrooms and cut into cubes.

Add oil to the pan, wait until the oil is hot, add diced chicken and stir-fry until cooked.

Serve the diced chicken

Add oil to the pot again, first add the onion and stir-fry until fragrant, then add the green pepper and stir-fry for a while, then add all the remaining vegetables

When the vegetables are almost cooked, add the curry cubes

Stir the curry well, add some water and simmer for a while until the vegetables are all cooked. Taste for salt. If it is not salty enough, add more.

Add the leftover rice and stir-fry until the rice is combined. Use a shovel to break up any large rice chunks. This step should be completed in advance.

Serve the fried curry rice out

Sprinkle evenly with grated cheese, I used MicroBlue mozzarella cheese

Bake the cheese in the oven at 180 degrees for 10 minutes. The finished product comes out of the oven and looks pretty good.
