Wash the dried tofu and steam it in a pot with cold water. Pay attention to spread a layer of dried tofu and put a pair of chopsticks on it so that each layer can be heated evenly

When steaming dried tofu, we can slice the prepared ginger and garlic for later use.

Steam over high heat for 10 minutes, then lay flat to cool.

Cut the dried beans into strips 10 cm long and 5 cm wide

Heat the oil to 80% heat, add the dried beans and fry until golden brown.

Add Sichuan peppercorns, garlic slices, ginger slices, salt and pepper pickling water to the fried dried tofu and marinate for a day. A little salt will add a salty taste to the pepper pickling water.

It's ready to eat. If you like it chewy, you can dry the soaked dried tofu to remove some moisture.
