Overview
Seafood, poultry egg yolk and tofu meet. The three tastes of soft, tender and sandy are intertwined; the flavors of the three ingredients blend together to burst out with a wonderful aroma.

Dice the silken tofu.

Peeled egg yolk. If you are particular about it, it is best to use salted duck egg yolk

Crush the egg yolks with a spoon

Pour oil into the pot, add egg yolks over low heat and fry until foamy

Pour in the clam soup and bring to a boil

Add the tofu and clam meat. Do not stir it with a shovel or spoon to prevent the tofu from breaking. You can gently shake the pot to mix it evenly. Change to medium heat and simmer for 5 or 6 minutes. You can control the time yourself. If you like the soup to be more juicy, use a shorter time. Otherwise, use a longer time. Before serving, add some chicken essence to thicken the gravy. When thickening the gravy, turn the heat to low and gently shake the pot without turning
