Overview

Pulled noodles are a common pasta in our northwest region. It is simple to make and has a unique flavor. In fact, the most authentic pulled noodles are made with scrambled eggs with tomatoes, diced potatoes and radish as a side dish, plus cured meat cooked in a century-old soup, sprinkled with coriander and then dry mixed into pulled noodles. Such an authentic taste belongs to Fanji, our century-old restaurant in Xi'an. It’s just that when I was a child, in an era when I couldn’t even smell the smell of meat, my dad could make this kind of vegan soup noodle slices for our children, which was also the pride of our small courtyard. Of course, in today’s era of such high-end living standards, you can mix and match your favorite vegetables according to personal preferences, which will be more nutritious and is also a good choice for the elderly and children.

  1. Mix the dough ingredients together and knead into a smooth dough, cover with plastic wrap and rest for 30 minutes;

While the dough is resting, prepare the ingredients; wash and peel the tomatoes and cut them into chunks, wash and peel the potatoes and cut them into small pieces, wash, peel and cut the carrots into small pieces, shred the ginger, chop the green onions and coriander, and beat the eggs with a little salt;

  3. Heat up the vegetable oil in the pan, pour in the egg liquid, stir-fry until it forms chunks, and set aside;

  4. Heat up the vegetable oil in a pan, add shredded ginger and chopped green onions and saute until fragrant;

  9. Boil water in a pot over medium heat, add a handful of peppercorns, bring the water to a boil, then reduce the heat to low and simmer for a while, remove the peppercorns and throw them away;

  10. While the water is boiling, take out the dough and roll it into a large 3 mm thick sheet;

  11. Use a knife to cut into 2 cm wide strips;

  12. Take a noodle, hold one end of the noodle with your left hand, pinch the noodle with the thumb and middle finger of your right hand, pull off a piece about 2 or 3 cm in size from this end and throw it into the pot;

  13. Like this one after another until you grab every one (you will become a lightning hand in the end);
