Pan-fried fish head tofu
Overview
Every time I eat fish, I like to eat fish heads the most. They are rich in nutrients and delicious! Then add the tofu, which is tender and refreshing, especially the garlic sprouts at the end, which have a unique fragrance! It will be full of fresh aroma when it comes out of the pot. When making this dish, silver carp and grass carp heads are generally the most suitable for making fish head tofu.

Clean the grass carp head, apply a little salt, a spoonful of cooking wine, and coat with cornstarch and set aside.

Pour an appropriate amount of cooking oil into the pot and fry the fish head on low heat for 2-3 minutes.

Pour in cooking wine, light soy sauce, dark soy sauce, add ginger slices and garlic cloves.

Pour an appropriate amount of boiling water into the pot, add a small piece of lard, cover the pot, and simmer for a minute or two.

Garlic sprouts and tofu prepared in advance.

Cut a piece of tofu into two pieces, then cut it into small cubes. Cut the garlic sprouts into segments with a slant knife at a 45-degree angle.

Pick up the cut tofu cubes from the cutting board, use a knife to gently put them into the pot, add salt, sugar, and taste very fresh.

Sprinkle garlic sprouts and prepare to serve.
