Braised rice with bamboo shoots
Overview
Bamboo shoots are abundant in this season. If you get tired of eating fried bamboo shoots, try something different. Braised bamboo shoots rice with bacon is so delicious.

Wash the rice and set aside (if you like glutinous rice, you can use glutinous rice instead)

Slice bacon.

Boil the bamboo shoots once, cut into sections and set aside.

Heat the oil and stir-fry the bacon for a few minutes (I use a pressure cooker to cook rice, so I fry it directly in the pot)

Add bamboo shoots, ginger and garlic ingredients and stir-fry together.

Add the washed rice and mix well, add salt, dark soy sauce and chicken essence to taste (if you like spicy food, you can add chili pepper)

Add water to cover the rice (similar to the water you usually use for cooking rice), cover with a lid and cook over high heat for 5 minutes, then turn to medium to low heat for 10 minutes.

Once cooked, serve immediately.
