The main ingredient is lean pork. Try to choose meat without tendons such as plum pork. You need a star anise, a little pepper, green onion and ginger

Cut the meat into small pieces along the grain. No matter how short the grain is, it will be shorter when fried. Try to cut it as long as possible

Add pork, pepper, star anise, onion and ginger to the pot, add cold water, bring to a boil and knock off the foam, cover and simmer for 2 hours

Take out the cooked meat and roll it out thinly with a rolling pin

Then use the rolling pin to rub it back and forth against the grain, without tearing it with your hands

Knead everything and throw it into the bread machine bucket, add light soy sauce, sugar, salt and fish sauce

Turn on the dough program and stir for a few minutes to allow the seasonings to be evenly distributed, then turn on the jam program. The jam program of my bread machine is 1 hour and 20 minutes

You can open the lid several times to release the water vapor or open the skylight

The last 20 minutes of the jam program is for baking. At this time, observe the dryness and humidity of the meat floss. You can stop the program and restart the jam program.
