Purple Cabbage Pancakes
Overview
Purple cabbage can not only be used in cold dishes, but can also be made into vegetarian pancakes. Mix evenly with flour and fry until both sides are golden brown.

Ingredients: flour, yellow rice noodles, eggs, green onions, carrots, purple cabbage.

Cut the purple cabbage into shreds first and then cut into pieces with a knife.

Chop green onion into pieces.

Grate the carrots into shreds.

Mix purple cabbage, carrots, and green onions into a pot.

Add salt, pepper powder and sesame oil and mix well.

Beat in eggs and mix well.

Add both flours.

Mix well, if it feels dry, add a small amount of water to adjust.

Turn on the heat and pour oil into the pot.

When the oil is 50% or 60% hot, use a spoon to scoop a spoonful of batter into the pan, slowly flatten it with a spoon, and fry until one side is golden brown, then flip over and continue frying. When both sides are golden brown, take it out.
