Wash the pangasius, drain it with kitchen paper towels, cut into strips, add a little salt and marinate for about ten minutes.

Finely dice the onion.

Add flour and dry starch to the egg whites and stir into a slightly thick paste. Add a few drops of vegetable oil and mix well. Set aside.

Add the fish strips into the egg white batter, mix well, and coat evenly with the egg white batter.

Fry in 50% hot oil pan over medium heat until lightly browned, drain and set aside.

Take another pot, pour a little oil, add onions and saute until fragrant.

Add tomato paste and stir-fry for a while.

Add 1 small cup of water, sugar, a little salt, and white vinegar and bring to a boil.

Pour in water starch to thicken the sauce, turn off the heat and set aside.

While the sauce is cooking, heat the oil in the fryer to 80% heat again, add the fish strips and fry again until the surface is golden and crispy, then take it out.

Bring the cooked sauce to a boil again.

Pour in the fried fish strips and quickly stir-fry evenly.

Remove from pan and plate. Sprinkle with chopped cooked peanuts.
