Add oil, salt and eggs to the flour and mix well with chopsticks

Add 40 grams of water to the yeast and dissolve it, then pour it into the noodles and mix well (the amount of yeast is more in winter, and you can reduce the amount by 1 gram in summer)

Pour 30 grams of hydrated baking soda into the flour and mix well

Knead into smooth dough

Cover with plastic wrap and ferment until it is full of holes (in winter, if the temperature is more than ten degrees indoors, it will ferment overnight and it will look like this when you wake up early)

Spread baking paper on the counter, take out the dough, put on disposable gloves and apply a layer of oil on the surface of the dough. Apply oil to a knife and a chopstick. Gently press the dough with your hands into a rectangular shape of 10 cm, 5 cm wide and 2 cm thick

Cut into long strips with a knife, stack the two together, and press them with chopsticks

Pour oil into the pot and heat it until it is 50% hot. Add the fried dough sticks and fry slowly over low heat (to judge the oil temperature, you can first put in a small piece of noodles and it will float)

After the bottom is fried for a while, use chopsticks to hold the fried dough sticks and turn them over (do not use chopsticks to pinch them, because the dough is soft and has not been fried hard yet, and it will break in the middle). After both sides become hard, you can flip it frequently until it is golden brown
