Overview
The anchovy shrimp balls were originally intended to be deep-fried, which is definitely more delicious, but considering that they have been getting meaty lately, I decided to bake them in the oven. The round shrimp balls are very cute and beautiful, and they are easy to make. They can be served as a banquet dish during the Spring Festival, symbolizing reunion and perfection.

Peel the potatoes and cut into thick slices and steam them in the rice cooker.

Remove the shells from the shrimps, keep the tails, and use a toothpick to remove the shrimp lines. Add a little salt, white pepper, a little starch, cooking wine, stir evenly and marinate for a while.

Prepare 2 beaten eggs, starch and bread crumbs.

Use a spoon to mash the steamed mashed potatoes and add appropriate amount of salt to taste. Then use disposable gloves to wrap the mashed potatoes around the shrimp and arrange them into a ball.

Roll the shrimp balls in the starch, shake off the excess starch, roll them in the egg liquid, and finally dip them in bread crumbs and press them firmly with your hands.

Place all the prepared shrimp balls on the baking sheet and bake in the middle rack of the oven preheated to 180 degrees for 20 minutes.
