Soaked mushrooms, sliced and set aside.

Wash the soybean sprouts, drain and set aside.

Cut green onions into sections and set aside.

Heat a pan, add an appropriate amount of oil, add onion and stir-fry until fragrant, then add soybean sprouts and shiitake mushrooms, season with a little salt and light soy sauce, stir-fry over medium heat for one minute, until the soybean sprouts become soft.

Plate and serve.
