  4. Add about 30g of rock sugar, 4 tablespoons of rice wine, 2 tablespoons of dark soy sauce, 4 tablespoons of light soy sauce...👈It looks like there is already a lot of juice, so there is no need to add more water~ Cover and simmer or steam for about 3 hours

Here’s what it looks like after 3 hours~ Because Dongpo Pork is focused on being mellow and juicy (it’s best not to add water to the sauce), crispy but not broken into pieces (steaming takes longer), fragrant and glutinous but not greasy (wine and sugar are what make the meat de-greasy). If you don’t like too bad, 2 hours is enough
