Dry-roasted pork ribs and braised noodles
Overview
I went shopping last week and ate out at noon. What I ate was this, braised pork ribs and braised noodles. It was delicious. People who love noodles have made soup noodles, fried noodles, noodles, and cold noodles, but they have never made braised noodles. Yesterday, I made them for the first time. It was not ideal. The noodles were a bit dry. I will continue today. My hard work pays off. I give myself a pat on the back.

Boil the pork ribs for another 20 minutes, remove and set aside. Reserve the bone broth for other uses. I used the broth to cook millet porridge today

Star anise, fennel seeds, etc.

Wash the side dishes

Cut the side dishes as you like

Chop green onions and cilantro into small pieces, leaving the leaves for decoration

Heat the oil, put the ribs down and fry for five or six minutes, whichever feels right

Flip over and fry for another five minutes

Add peppercorns, star anise, ginger, fennel seeds, chili shreds and stir-fry until fragrant

Add two bowls of water, soy sauce, salt

Cover and cook for ten minutes

Open the lid and put the side dishes on it

Spread the noodles on top of the side dishes. The noodles I made yesterday were a bit dry. Today I will sprinkle some water on the noodles, cover them and simmer for 7 minutes

Open the seal and sprinkle with chopped green onion and coriander heads
