Shredded pork with bamboo shoots

This is a dish that my mother loved to cook for me when I was a kid. The recent tall bamboo shoots are very fresh and tender when fried with simple seasonings. Very sweet

Cut the fattened part of the pork into thin strips. When you sandwich the meat before use, it will have a little bit of fat on it. It will taste better if you add cooking wine and a little salt. Marinate evenly with a little water starch rapeseed oil for 15 minutes

Wash the tall bamboo shoots

Grate the bamboo shoots and green pepper into thin strips and set aside.

Shred the ginger and cut the green onions into sections. Chop the remaining green onions and set aside

Add a little bit of mixed oil and fry the bamboo shoots and green pepper till they are raw. Be careful not to stir-fry the Duan Sheng too soft, then remove from the pot and set aside

Put a little more blended oil in the pot. After the oil is hot in the pan, add the ginger and scallions. Sauté

Pour in the marinated shredded pork and stir-fry quickly.

Pour in appropriate amount of light soy sauce and oyster sauce. It is not recommended to add other seasonings. Other seasonings will cover up the fragrance of the bamboo shoots

Add the green pepper and bamboo shoots and stir-fry for a minute.
