Stir-fried pork elbows with skin
Overview
Elbows are usually roasted, stewed, marinated, steamed, and simmered at home. I have never fried them before. I saw this stir-fried pork elbow dish with skin on a food show a few days ago. I also tried to make it. The original dish was made with red oil, but I was afraid it would be too spicy and the children at home would not be able to accept it.

Wash the boneless elbow and cut into thin slices. (Put it in the freezer before cutting, it is easier to cut)

Wash all ingredients and set aside.

Dice the peppers, slice the ginger and garlic, and cut the green garlic into inch-long sections.

Heat a pot, add a little oil, add the elbow slices and stir-fry until they change color and spit out the oil.

Add oil and 1/2 garlic and ginger slices to the pan.

Add the elbow slices, add cooking wine and boil water and cook for 10 minutes to soften the meat.

Then add soy sauce, sugar, salt, ginger and garlic, double pepper, and green garlic stalks.

Finally, add green garlic leaves, add chicken essence and pepper to taste
