Bread Salad
Overview
European staple bread - overnight, dry, hard, the older the better - combined with cucumbers, tomatoes, onions, mixed with olive oil and vinegar, and sprinkled with a handful of herbs from the balcony (basil is the best), it is a healthy vegetarian meal with Tuscan style. Serving a plate like this for breakfast, paired with a glass of orange juice, is nutritionally balanced and reasonably paired, keeping people full of energy throughout the morning. As lunch or dinner, it is both filling and nutritious, and you don’t have to worry about gaining weight. From the perspective of the dish itself, any kind of bread is acceptable. But if you want to pursue a vegetarian diet, use European staple bread without added butter. Hey~, it seems good to use our overnight dried steamed buns!

Tear the bread into pieces with your hands and put it into a large salad bowl;

Add extra virgin olive oil;

Add vinegar (grape vinegar, apple cider vinegar, rice vinegar will all work);

Add sea salt;

Add freshly ground pepper;

Mix well;

Add tomatoes and cucumbers cut into small pieces; you can use large tomatoes or cherry tomatoes;

Squeeze in the minced garlic (you don’t need to add it if you don’t like the smell of garlic or are afraid of the breath);

Add some vinegar and olive oil and mix thoroughly;

Add shredded onions and slightly torn basil leaves; (you can omit the onions, but you must have basil. If you don’t have fresh ones, you can use dry ones).

Mix well - mix, mix, mix - mix until the surface of the bread is slightly moist.

Sprinkle some dried fruits at the end. I used pine nuts, but anything else such as walnuts, peanuts, raisins, etc. will work.
